Asian Pickle Cucumbers

This could be possibly used as a true pickle, but some one more knowledgeable than me needs to make that determination.

Recipe:
2 large cucumbers
2 cups apple cider vinegar
2 tbs minced cilantro
2 tbs soy sauce
1 bunch of green onions or 1 small onion diced
1 tbs chilli powder or paste
1 cup sugar
1/2 tsp ginger powder

Makes approx 3 quarts

In a sauce pan combine all ingredients except the cucumbers.
Heat untill sugar is dissolved

Chop or thinly slice the cucumbers into a mixing bowl.
Add liquid mix.
Chill in fridge while sterilizing glass jars.
Fill jars and seal.

Because I am not counting this as a true pickle and did not pressure cook them, the jars went back in the fridge. It is also a great recipe for those glass jars you get from premade sauces as you can see.

Florida soil .... uh sand

Sitting here watching the rain I have realized that Florida sandy soil is uniquely suited to Floridas weather.

The sandy soil allows for the heavy rain fall to quickly disperse underground where roots need it.

Not only does it allow the roots quick access to the water, but it also keeps flooding to a minimum. With the hard pan of rock/clay etc underneath the sand you have a natural almost french drain. This allows for a greater and better distribution of the precious water to other bigger and deeper rooted plants.

Color me in aw of mother nature right now.

Seasons start

Got a good start to the season gong. Black beans and.Cherokee purple tomatoes popping up. The 5 bell pepper plants and the collard greens have survived the summer so far.

I did plant green beans when i put the tomato and black beans in, but apparently having 4+ inches of mulch to grown thru is not conducive to them actually making it. I have replanted and "collared" them with toliet paper rolls. We will see

More Room!

This past Sunday I decided it was past time to put in more Garden space.

So I started pulling the grass up, then with the help of my mommy the edging stones were placed and finally the fencing.

There are red onions planted around the perimeter, 3 pepper plants on the rounded end, blackeye peas between the taller fence poles and marrigolds infront of the peas.

spring plantings

with the coming of spring its time to plant more.

put the three sisters in the turnips old box.

green beans went in where two of the three Cherokee purple plants had died off from the frost.
